Welcome to Aure.

A place created by us, Nicky Arentsen and Emma Nørbygaard, where we invite you inside our historic gunpowder house from 1745 at Holmen. Here we have built an experience that celebrates the finest ingredients and nature's changing seasons.

In the kitchen, Nicky works with three fundamental elements.

The sea, the earth, and the forest.

- which inspire him in the composition of the menu. He celebrates the fish and seafood of the sea, the vegetables and herbs of the earth, and the game and berries of the forest, creating dishes where each ingredient is allowed to express itself in its purest form. We believe that the best products and flavors come from close collaboration with our suppliers and producers who share the same respect for nature and the quality of the ingredients we work with together.

As our guest, you can expect an honest and sensory experience, where the combination of Nicky's flavors and memories is truly allowed to shine through in its purest form.

For us, Aure is about creating an experience where nature's three basic elements meet, and we get the opportunity to share our love for gastronomy with you.

Aure is created from passion, presence, and love - and this is exactly what we emphasize in the overall experience at the restaurant.
